Cold Chain: The Race Against Time

After cutting, asparagus spears must be cooled as quickly as possible. Because asparagus loses moisture so fast, the cold chain from field to packing house to reefer container is managed in hours, not days.

In transit, asparagus is usually shipped upright or carefully packed so that spears are not crushed, with ice or cooled packaging helping to hold temperature. The objective is simple: deliver spears that are still crisp, bright and tender, with tightly closed tips, at the destination.
